Crunchy Bang Bang Shrimp Stir Fry

Dry ingredients
· Glutinous Rice Flour
· Potato Starch
· Cornstarch
· Honey
· Soy Sauce
· Sweet Chile Sauce
Phase one: Begin by peeling and cleaning your shrimp (wild caught, medium sized). Make a buttermilk bath by combining one cup of cold buttermilk, about 2 tablespoons of cornstarch, and some glutinous rice flour. You want this mixture to be thick enough to coat the shrimp.
Phase two: Dip your shrimp in the buttermilk mixture, then into potato starch mixed with glutinous rice starch. Once coated, fry for 3-4 minutes on high heat. Allow the shrimp to dry.
Phase three: Chop up peppers, scallions, ginger, and garlic and sauté in a pan. In a bowl, combine sweet chile sauce, soy sauce, and honey (measure with your heart). Add this mixture to the peppers and add mayo slowly on a low heat. Once the sauce is 75% done, add the shrimp back to the sauce and turn down the heat. Allow to cook a bit more until it is reduced.
Plating: Garnish with sesame seeds and chopped scallions. Serve over sesame oil rice!
