Delicious Mahi-Mahi Recipe

Name: Mahi-Mahi Serving: 4 Prep Time: 5 mins Cooking Time: 15 mins


Meat:

· 2 pieces of mahi-mahi

Produce:

· Four oranges

· Four limes

· One lemon

Dry Spices:

· Salt

· Garlic powder

· Brown sugar

· White pepper

Dairy:

· Cold butter

Dry ingredients

· Rum

· Oil


Phase one: Oil and season your mahi-mahi with white pepper, garlic powder, and brown sugar. Using a fat of your choice, sear both sides of the fish. While the fish cooks, in a separate bowl combine the juice of four oranges, four limes, and one lemon.


Phase two: Once the fish is seared, deglaze the pan with the juice mixture and add a bit of salt. Flambé the fish with an ounce and a half of rum. Cool this mixture down with cold butter and baste the fish until fully covered. Allow this to rest for a couple more minutes and add the extra sauce to the top.


Plating: Serve with the additional sauce and a rosemary spring to garnish!
