Phase one: Begin by cutting up beef into bite sized pieces and marinate in mustard, salt, and spicy epis (the epis recipe is posted). Cut down your vegetables (eggplant, chayote squash cabbage) into bite sized pieces and put them into a pressure cooker with beef stock, allow to cook for 20 minutes.
Phase two: While that cooks, brown your marinated beef. Once the beef is mostly cooked, toss in chopped up onions and peppers and allow to cook through. To the pan, add tomato paste, bullion cubes, more epis, garlic, and water. Allow this to cook down for 25 minutes and add in the vegetables that were in the pressure cooker.
Phase three: Add in roma tomatoes and your spice mix (white pepper, cumin, sweet and smoked paprika, thyme, and clove). Once this cooks down a bit more add in the liquid from the pressure cooker wish spinach. Cook this covered until the spinach is wilted. Next, remove the lid and adjust for seasonings, cook until it is the constancy of a stew. After about 40 minutes let it cool down before serving.
Plating: Serve with rice!
