Produce:
· Potatoes
· Fresh parsley
Dry Spices:
· Paprika
·Salt
·Black Pepper
Dry ingredients
·Canola or vegetable oil
·Duck Fat
·Vinegar
Dairy:
·Parmesan cheese
Phase one: Using a melon baller, scoop out your potato of choice. Boil the potatoes in very salty water for around 5 minutes (make sure they don’t get soft). Cool them in an ice bath and dry them off.
Phase two: Using vegetable or canola oil, deep fry the potatoes until they are golden brown and remove. Season the potatoes with duck fat, chopped parsley, paprika, and black pepper. Finish them with grated parmesan and serve.
Plating: Serve with a protein of your choice or by itself
