· Ketchup
· Caper brine
Phase One: Start by chopping up your red/green peppers, scallions, onions, and jalapeños. Then melt a fat of your choice in a pot (beef tallow works well), and cook off some epis and roasted garlic. Once that has cooked off, add in your chopped vegetables and cook until they are nice and soft.
Phase Two: Add in a bit of water to the pot to loosen it up before adding in your chicken sausage (or any sausage of your choice). Cook the sausage until it is fully done, then add in sea salt and butter and stir. This is the point where you add your dry seasonings as well: cajun seasoning, white pepper, thyme, and cayenne.
Phase Three: To the pot, add in around two tablespoons of ketchup and a little bit of caper brine (or olive brine). Once the oil has separated, add in your washed rice and toast it in the pot by continuously stirring it (making sure it doesn’t burn at the bottom). Add in regular chicken bullion or a chicken bouillon cube before adding in your water, red quinoa, and kidney beans. Stir this, then cover on low heat for around 25 to 35 minutes.
Plating: Serve with eggs, pickled cabbage, and plantains!
